Roasted Sweet Potato and Black Bean Quesadillas

This week I’ve been on on fire with my vegan meals and have scoured the internet for tasty recipes,and Pinterest has been my ride or die! Put some salt on that Shhhh!

I found this : Roasted Sweet Potato and Black Bean Quesadillas and it caught my eye straight away. The thought of all them black beans and cheese (I still haven’t given up cheese). I also tried out two other recipes Sticky cauliflower with sesame seeds & Buffalo cauliflower bites with vegan sour cream go on give it ago!
